Ginger Glazed Salmon Steaks

Ingredients

2 Tablespoons Fresh Ginger -- Finely Grated
3 Tablespoons Dry Sherry
2 Teaspoons Soy Sauce
1 Teaspoon Vegetable Oil
1 Teaspoon Dry Mustard
2x 6 oz Salmon Steaks with Their Skin -- Boneless

Method

Put the grated ginger in a fine strainer and set over a bowl. Press down
on the ginger with the back of a spoon to extract the juice. Discard the
ginger pulp. Stir the sherry, soy sauce, vegetable oil, and dry mustard
into the juice and season with salt and pepper.

Place salmon steaks in a broiler pan. Pour the ginger marinade over the
salmon and turn to coat. Cover and let stand at room temperature for 30 -
40 minutes, turning once more.

Preheat broiler. Broil the salmon for about 6 minutes, without turning,
just until the steaks are cooked through. Transfer the steaks to
individual plates. Spoon the pan juices over the salmon and serve with
steamed rice.

Suggested side dish servings are stir-fried snow peas, mushrooms, red bell pepper and scallions with lemon juice and soy sauce.

Great with Basmati or Jasmine rice
